Why would someone write a book if they have no interest in getting published?

For the love of writing! To be in the process of creating rather than in the end product. To get an idea out, to follow the inspiration, to be in the love of writing. To feel like a writer. When we create for someone to see it or monetize our art it can take the fun out of the process or our critic can come out swinging. Create for the joy of creating. A painter doesn’t have to sell their work. A dancer doesn’t need to dance on stage. A musician can play for the love of playing. So a writer can write for the joy of writing. And, in our current world with on-demand printing, a writer can publish a book much easier and order just one copy for themselves! What a fun celebration that could be!
