Absolutely there are many different styles of sketching whether it be cartoonish to realistic and as long as your staying true to genuine anatomy and if your adding lighting and shading then the proper ways the light and shows would look then your absolutely learning something with each drawing it’s a matter of challenging yourself and sketching is just as great of a way as any.
on a side note while you most certainly can learn a sense of anatomy coloring and shading from a cartoon like style it’s almost always recommended you learn a sense of realism so you always know how to take a cartoon style and keep a real sense of anatomy with it while that harder to achieve by only knowing a cartoon style.
as for the technical side it really is all about practice. I think the best answer I could give is that my art teacher told me if you draw an apple for a year by the end it should look great. You learn from your mistakes as you grow and you start to see where you can improve and you improve upon them. Best of luck love🤍
