Is one ever able to "know something and simultaneously not believe "the aforementioned something that "said one" knows""?

Knowing is simply the word we apply to things we’re convinced are true.

Since I understand that I can be fooled or misinformed even by my trusted authorities, I can reasonably assume that even my knowledge should be suspect & so I may withhold belief on things that I can’t sufficiently justify.
