The issue is not with the subject area or discipline, but how much hands-on and/or laboratory time is required to meet the learning objective.
Even so, there is a surprising amount of background and practice that can be done online. A lot of times there is theory to master before the skill can be performed correctly. For example, I designed some eLearning on human respiration that recruit firefighters had to learn before they learned how to don and doff their self-contained breathing apparatus. I have also created eLearning for first aid where learners did all the learning online but were tested in person before an expert instructor on the actual hands-on skills involved such as resuscitation, bandaging, and wound care.
As virtual reality and immersive environments become cheaper but even more sophisticated, I expect this kind of hybrid learning to increase.
